Mosaic Single Hop Bursted Pale Ale

May 24, 2016 by Ethan Johnston 2 Comments

For our blog post this week, we’re doing something a little bit different. In celebration of National Homebrew Day last month, Ethan in our Carrboro store created a hop-bursted pale ale featuring Mosiac hops. This beer has a bright aroma, with hints of white grape, mild citrus, and subtle floral notes. It was so tasty, we thought we’d share the recipe with you – enjoy!

Mosaic Single Hop Bursted Pale Ale

HopBurst2

Assumed Efficiency: 78%
Target OG: 1.049
Apprx. Alcohol: 5% abv

Grain Bill

  • Canada Malting 2-Row Pale Malt – 9.5 lb (84.4%)
  • Best Malz Vienna Malt – .75 lb (6.7%)
  • Rice Hulls – 1 lb (8.9%)

Hop Bill

  • Mosaic Hops – pellets – ½ oz. (11.3%AA) @ 25 min (5.7 AAU)
  • Mosaic Hops – pellets – ½ oz. (11.3%AA) @ 10 min (5.7 AAU)
  • Mosaic Hops – pellets – 1 oz. (11.3%AA) @ 5 min (11.3 AAU)
  • Mosaic Hops – pellets – ½ oz. (11.3%AA) @ 0 min (5.7 AAU)

Yeast
Wyeast American Ale 1056 (~190 billion cells via starter)

Mash Schedule

  • Single Infusion Mash: Target 150˚-152˚ F
  • Duration: 60 min
  • Sparge: Target 168˚F and hold for 15 min

HopBurst1

Collect your mash/sparge volume and begin a standard boil. This batch is a hop burst and will not utilize a 60 minute hop addition. Rather, it will rely on large late hop additions to achieve bitterness while imparting a pronounced aroma. Hop according to the schedule and add a kettle fining with 15 mins remaining. Cool to 68˚-70˚F and pitch your starter.

Deep within the arid climate of Washington s Yakima Valley grows the Mosaic Hop, a newcomer that makes its debut in our pFriem Mosaic Single Hop Pale. This strong ale glows with an amber hue. Wafts of mango and citrus tease the senses just long enough before its assertive taste takes over with hits of lemon, pine and a slight tinge of blueberry. Make no mistake; this ale has a bright and tasty future.

This strong pale ale is bright golden with an amber hue. Pungent aromas of mango and citrus. Hops fill the mouth with lemon, pine, and a hint of blueberry. Finishes assertive, but soft.
