Ira Wallace of Southern Exposure Seed Exchange and author of the Timber Press Guide to Vegetable Growing in the Southeast will lead a class on planning, planting and producing a garden all year… starting now! Crisp winter salads, rainbow carrots, fresh kimchi and sweet braised greens are just a few of the fresh-from-the-garden delights awaiting food gardeners in the southeast during the winter.
Ira is a central Virginia master gardener and worker/owner of the cooperatively-owned Southern Exposure Seed Exchange. She serves on the boards of the Organic Seed Alliance (OSA), the Virginia Association for Biological Farming (VABF), and the Organic Seed Growers and Trade Association (lead plaintiffs in OSGATA et al v. Monsanto). Additionally, she is an organizer of the Heritage Harvest Festival at Monticello and a member of the Acorn Community, which farms over 60 acres of certified organic land in Central Virginia.
Food Fermentation Workshop with Farmstead Ferments’ Chelsea Wakstein
Join us for an inspiring workshop on how to become a fermentation artist at home! Farmstead Ferments’ Kraut Creatress Chelsea Wakstein will lead a discussion on the history, culture, and health benefits of lactic acid fermentation. The class will focus on the practical application of vegetable fermentation techniques including the skills needed to make sauerkraut, kimchi and pickles. Class attendees will have the opportunity to make sauerkraut to take home and will leave with the knowledge of how to experiment further in a home kitchen.
